I cut one full rack into 3-bone sections, lined my roasting pan with foil, added just enough water to the bottom of the pan to cover the pan and preheated to 250 F. I have a rosemary bush so I cut a 10" twig and layed it in the pan with 3 cruched cloves of garlic, around the meat. Covered the whole thing up with foil & baked 3 hours. Let sit 10 minutes after cooking. The aromatics flavor the meat without having to be put diectly on the meat. The flavor was great and the meat fell off the bones. I uncovered mine the last 15 mins & I though they were a tad dry on the outside- but we put BBQ sauce on all but our little FMer's.
