Ingredients: 

1lb Burger
1/3 cup uncooked 5 minute rice
2 red bell peppers
Olive oil
1 cup chicken broth
Salt & Pepper
Basil


  1. Cut 2 red bell peppers into 4 wide slices, drizzled with olive oil and broil on both sides until soft and slightly browned.
  2. Put peppers in Vitamix (or food processor) with 1 cup chicken broth. Salt, pepper & basil to taste.
  3. Use 1lb of burger mixed with 1/3-ish cups of uncooked white rice (I use 5 minute rice) to form meatball sized balls.
  4. Put meatballs in an ungreased glass baking dish and cover with sauce. Bake at 350º for 45 minutes covered, then 20 minutes uncovered.  (We serve them on a baked potato & my daughter likes to top with sour cream)
