Miso Soup with Leeks

Ingredients: 

1 cup diced carrots
1 cup diced onion
1 cup diced celery
1 four inch square of dried seaweed (dashi kombu)
1 cup thinkly sliced leeks (white and pale green part only)
3 tablespoons white miso


Directions

  1.  in a saucepan, combine carrots, onion, celery, seaweed, and five cups cold water
  2. bring to a simmer over a moderate heat
  3. adjust heat to maintain a simmer and cook, uncovered, until broth is flavorful, about 20 minutes.
  4. strain through a sieve and return to a clean saucepan
  5. add leeks and simmer over a moderate heat until leeks are tender, about five minutes
  6. whisk into miso. Server immediately.

Tips / Substitutes: try adding seafood! Would be good with some california rolls.
