Ingredients: 

For the Steak:

2 NY Strip Steaks (12 ounces each about 1 1/4-inch thick)
Kosher salt and freshly ground black pepper
2 tablespoons canola oil or other neutral oil such as vegetable

For the Thyme compound butter:

1 stick unsalted butter, slightly softened
2 teaspoons finely chopped fresh thyme leaves
Kosher salt and freshly ground black pepper

For the Mashed potatoes:

2 pounds Yukon Gold potatoes, peeled and cut into 2-inch dice
Kosher salt
1 1/2 - 2 cups whole milk
1 stick cold unsalted butter, cut into tablespoons
Freshly ground black pepper
