Sauteed Asparagus with Lemon

Ingredients

  • 1 bunch fresh asparagus
  • 1 tbsp olive oil
  • 1 tbps lemon juice
  • salt
  • pepper

Directions

  1. Remove white, hard root end of asparagus. Holding the stalk at both ends, bend the stalk until it snaps. Or use a knife.
  2. Wash the asparagus under cold water.
  3. Heat skillet on low-medium heat
  4. Add olive oil
  5. Add asparagus
  6. Cover and cook for 5 minutes tossing occasionally. 
  7. Add lemon, salt, pepper toss and remove from heat
  8. Cook for about 5 more minutes uncovered.  It's fininshed when asparagus turns dark green.

Preparation Time: 10-15 minutes
