Easy Crockpot Salsa Chicken

Notes: 

This is a super easy meal that freezes well and is great for lunches!

Ingredients: 

1 – 1.5 lbs of chicken breasts or tenderloins, thawed (I use 1 package of tenderloins from Costco)
1 cup of salsa (any salsa you prefer - I like Archer Farm's Fire Roasted Peppers and Habanero Salsa)
½ tsp salt
¼ tsp garlic powder
¾ tsp cumin
3 bell peppers, any color, sliced into strips
1 large red onion sliced into strips
Brown rice or lettuce


  1. In a bowl, mix together the salsa, salt, garlic powder and cumin
  2. Place the chicken in the crock pot and cover with the salsa mix
  3. Cook on low for 3 – 4 hours
  4. Cut peppers and onion into strips.
  5. Saute until cooked in olive oil
  6. Shred chicken once fully cooked
  7. Serve chicken over brown rice or over lettuce topped with pepper and onion mix.  Add salsa or guacamole if desired.
